Sous Chef, Job Ref. JO3170. East/South Donegal. Perm. Excellent Competitive Salary. Full time Hours. Our client is a reputable Hotel located in East/South Donegal. They are currently seeking to recruit a Senior Duty Manager with Banqueting experience. This hotel operates all year round and has a busy Wedding, Functions, café bar and restaurant trade. Role Profile: The Sous Chef will work alongside the Head Chef to ensure the smooth day-to-day running of the hotel kitchens, ensuring maximum profitability, exceptional customer service and exceptional culinary standards at all times. The post holder will be required to build excellent interpersonal relationships with a diverse range of external and internal stakeholders. The Sous Chef will manage and coordinate the kitchen teams and food service in the absence of the Head Chef. This role will require close collaboration with the Head Chef, Executive Chef, Operations Manager and General Manager to ensure that the highest standard of customer service and culinary standards are achieved at all times. Key Responsibilities: Manage and oversee the daily operations of the kitchen to ensure adequate resources are assigned to areas of need and that the required standard of service is provided at all times. Support in the design and preparation of all food menus and kitchen dishes. Manage the kitchen to operate in a timely manner ensuring that the quality standards of food and customer service are met. Manage the preparation and delivery of quality culinary standards for all food bookings including bar food, restaurant, function room(s), weddings, tour groups etc. This list is not exhaustive. Promote and monitor food safety standards across all areas of operations. Take responsibility for the completion and follow-up of food safety records including, but not limited to HACCP. Take responsibility for the general appearance and cleanliness of the kitchen to include; store rooms, fridges, freezers, dishwashing area, storage areas and the pass. This list is not exhaustive. Ensure adequate resources are available to meet critical business needs by maintaining and auditing inventory and placing orders where necessary. Monitor occupancy forecasts to ensure that adequate staffing is available. Assist the Head Chef in preparing kitchen rotas to ensure that staffing levels meet critical business needs. Ensure that the kitchen service is operated safely and hygienically with a fo-cus on quality culinary standards. Work with the Head Chef to ensure that standard operating procedures are in place and up-to-date in the kitchen. Take responsibility for the kitchen procedures and the training of relevant employees in accordance with same. Audit all kitchen practices on a regular basis ensuring that the relevant pro-cedure is being adhered to at all times. Investigate complaints regarding the kitchen service and equipment and take corrective action where necessary. Ensure that the proper maintenance of all equipment is adhered to in line with the recommended standard and make arrangements for repair or re-placement of used and damaged equipment. Provide reports to the Head Chef on staff performance on a monthly basis and other ad hoc reports as required. Essential Criteria: The ideal candidate will have substantial, recent previous experience work-ing in a similar capacity ideally in a 4-star hotel. HAACP training and experience. It is essential for this role that you have a considerable level of culinary ex-perience. It is also important to be able to work on your own initiative as well as be part of the team. You should be able to demonstrate excellent management skills. Preferred Requirements: Degree in Culinary Arts. FETAC Certificate in Professional Cookery. 3 years + professional experience.
