Restaurant Manager, Job Ref. JO3167. East/South Donegal. Perm. Full time hours. Salary – DOE. Our client is a reputable Hotel located in East/South Donegal. They are currently seeking to recruit a Restaurant Manager with previous Hotel Restaurant experience. This hotel operates all year round and has a busy Wedding, Functions, café bar and restaurant trade. Role Profile: The Restaurant Manager will be responsible for the day to day running of food service in both restaurant and bar in the Hotel ensuring maximum profitability, exceptional customer service and culinary standards at all times. The post holder will be required to build excellent interpersonal relationships with a diverse range of external and internal stakeholders. The Restaurant Manager will develop and maintain positive working relationships with all customers, event organisers and employees to ensure that the best product offering is available at all times in accordance with the Hotel’s strategy. They will promote a cost-conscious culture throughout the organisation, while continuously enhancing all services offered through innovative customer services. This role will require close collaboration with the Operations Manager, Head Chef and Bar Manager to ensure that the highest standard of customer service and culinary standards are achieved at all times. Key Responsibilities: Develop, monitor and coordinate restaurant offerings and sales strategy to maximise hotel revenue at all times. Retain responsibility and accountability for all the day to day activity in food serving areas in the Hotel. Responsible for managing all restaurant revenue (Credit cards/Cash/Invoice) in accordance with the standard operating procedures. Support in the design and preparation of all food menus and kitchen dishes. Promote and monitor food safety standards in your area of operations. Take responsibility for the completion and follow-up of food safety records including, but not limited to HACCP. Lead on the development of new customer service lines for your area of responsibility. Monitor relevant function sheets to ensure that the restaurant has appropriate staffing numbers to meet critical business needs. Set and monitor service standards across your area of responsibility. Ensure that standard operating procedures are in place and up-to-date in your area of responsibility. Audit all restaurant practices on a regular basis ensuring that the relevant procedure is being adhered to at all times. Act as first point of contact in executing the customer satisfaction and complaints procedures for your area of responsibility and be responsible for scoping the investigation and escalation where necessary. Ensure that all members of the restaurant team are delivering a high standard of customer service at all times. Responsible for ensuring that the restaurant staff create a positive image and reputation of the hotel. Develop and maintain trusting relationships with internal stakeholders to ensure that all restaurant activity is coordinated and managed, with the highest quality of customer service provided at all times. Develop and maintain trusting relationships with external stakeholders to promote the Hotel and to understand industry best practice and restaurant trends. Embed a cost-conscious culture in the Hotel by controlling, reviewing and reporting on KPIs across your area of responsibility. Monitor revenue, purchasing costs, departmental budgets and evaluation against KPIs. Take full responsibility for the general appearance and presentation of all restaurant areas to include; cleanliness, layout, lighting, music, heating, external premises. This list is not exhaustive. Ensuring the procurement of all necessary restaurant and till products in a timely manner to ensure that the correct inventory is available to enable the restaurant to operate effectively. Ensure that the restaurant service is operated safely and hygienically with a focus on quality customer service. Ensure that the proper maintenance of all equipment is adhered to in line with the recommended standard and make arrangements for repair or replacement of used and damaged equipment. Ensure only approved cleaning materials and equipment is used by all relevant staff. Prepare the restaurant Rota to ensure that staffing levels meet critical business needs. Manage, monitor and audit all restaurant stock on a continuous basis ensuring that regularly scheduled stock-takes are carried out. Desirable Requirements: Third level qualification in Hospitality or a related discipline. At least 3 years’ experience of working in a similar role. Self-starter – displays initiative and ability to work on project with little supervision. Strong attention to detail. Ability to work under pressure in a fast paced and dynamic environment. Excellent time management, multi-tasking skills and ability to meet tight deadlines. Interested in this role?
